Prepare the tuna

Pat the sashimi-grade tuna fillets dry with paper towels. Season both sides with salt and black pepper.

Coat with sesame seeds

Spread the sesame seeds on a plate. Press the tuna fillets into the sesame seeds on both sides to coat evenly.

Heat the pan

In a skillet, heat the sesame oil over medium-high heat until hot but not smoking.

Sear the tuna

Add the coated tuna fillets to the skillet. Sear for about 30 seconds on each side for rare, or longer if you prefer it more cooked.

Slice and serve

Remove the tuna from the skillet and let it rest for a minute. Slice the tuna into thin pieces. Serve with wasabi, pickled ginger, and drizzle with teriyaki sauce.
