Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes. Remove from heat and let it sit for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is done, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare the Vegetables

Thinly slice the avocado, cucumber, and carrots. Blanch the asparagus in boiling water for 2-3 minutes, then plunge it into ice water to stop the cooking process. Pat dry.

Assemble the Rolls

Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Layer the sliced avocado, cucumber, carrots, and asparagus on top of the rice.

Roll the Sushi

Starting from the bottom, roll the sushi tightly using the mat, applying gentle pressure. Moisten the top border with a little water to seal the roll.

Slice and Serve

Use a sharp knife to slice the roll into bite-sized pieces. Sprinkle with sesame seeds and serve with soy sauce or your favorite dipping sauce.
