Fire-Roasted and Fried Chicken
Marinate
Trim excess skin if desired and pat the chicken pieces dry with paper towels. In a large bowl, whisk 3 cups buttermilk with 2 tbsp hot sauce. Submerge the chicken in the buttermilk mixture, cover, and refrigerate for at least 4 hours or overnight to tenderize and flavor.
Prep dredge
About 30 minutes before frying, remove chicken from refrigerator and let it come toward room temperature (30 minutes). In a large shallow bowl or rimmed baking sheet, combine 3 cups all-purpose flour, 1/2 cup cornstarch, 2 tsp salt, 1 tsp black pepper, 2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder and 1/2 tsp cayenne. Mix thoroughly so spices are evenly distributed.
Dredge
Working one piece at a time, lift chicken from buttermilk allowing excess to drip off, then place into the seasoned flour and press firmly so an even coating forms. Place dredged pieces on a wire rack and let rest 10–15 minutes to set the crust.
Heat oil
In a deep heavy pot or Dutch oven, add enough vegetable oil to reach a 3–4 inch depth (about 1.2–1.5 L). Attach a thermometer and heat oil to 350°F (175°C). Maintain temperature between 325–350°F while frying.
Fry
Fry chicken in batches without overcrowding: lower pieces gently into hot oil. Fry bone-in pieces 12–16 minutes per batch, turning once halfway, until crust is golden brown and internal temperature reaches 165°F (74°C) near bone. Adjust time for piece size (thighs/legs take longer than wings). Remove to a wire rack set over a sheet pan to drain and keep warm in a 200°F (95°C) oven if needed.
Finish
Let fried chicken rest 5 minutes before serving to finish cooking and allow juices to redistribute.
House Slaw
While chicken marinates or fries, prepare the slaw. In a large bowl combine 4 cups shredded green cabbage, 1 cup red cabbage, 1 cup shredded carrot and 1/4 cup thinly sliced red onion.
In a small bowl whisk together 1/2 cup mayonnaise, 2 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tsp honey, 1/2 tsp celery seed, 1/2 tsp salt and 1/4 tsp black pepper until smooth. Taste and adjust seasoning.
Pour dressing over the cabbage mixture and toss to coat evenly. Refrigerate at least 15 minutes to let flavors meld. Toss again before serving.
Pickles & Ranch Sauce
Arrange 12 dill pickle slices on a small plate for service.
For the ranch: in a bowl combine 1/2 cup sour cream, 1/2 cup mayonnaise and 1/4 cup buttermilk. Add 1 minced garlic clove, 1 tbsp chopped chives, 1 tbsp chopped parsley, 1/2 tsp dried dill, 1 tsp lemon juice, 1/4 tsp salt and 1/4 tsp black pepper. Whisk until smooth. Adjust thickness with more buttermilk if needed and refrigerate until service.
Choice Sides (choose one)
Straight-cut fries
If using frozen fries: bake or fry according to package directions until crisp and golden, then season with salt. If using hand-cut: cut potatoes into straight 1/4–1/2 inch sticks, rinse and soak 30 minutes, dry thoroughly, then fry at 325°F (160°C) until tender 4–6 minutes; increase oil temp to 375°F (190°C) and fry again 2–3 minutes to crisp. Drain on paper towels and season with salt.
Potato & gravy
For mashed potatoes: reheat or prepare 2 cups mashed potatoes with 2 tbsp butter until smooth and warm. Heat 1 cup prepared gravy in a small saucepan until simmering. Spoon gravy over mashed potatoes when plating.
Plating and Service
For each serving, plate 2 pieces of fried chicken, a generous scoop of house slaw, 3 pickle slices and a ramekin of ranch sauce. Add the chosen side (about 1–2 cups): fries, mac’n’cheese, or potato & gravy. Serve immediately while chicken and fries are hot and crisp.
