In a large pot, bring 5 liters of water to about 160°F (70°C). Add the pale malt and crystal malt, stirring well. Maintain the temperature for about 60 minutes.

Mashing

After mashing, drain the liquid (wort) into another pot. Rinse the grains with hot water to extract more sugars, and combine this liquid with your wort.

Sparging

Bring the wort to a boil. Add the Cascade hops at the start of the boil. After 30 minutes, add the Columbus hops. Continue boiling for a total of 60 minutes.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter. Add the yeast and seal the fermenter with an airlock. Ferment for about 1-2 weeks until bubbling stops.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this to the bottling bucket and transfer the beer. Bottle the beer and cap it.

Bottling

Let the bottled beer condition at room temperature for about 2 weeks before refrigerating and enjoying.
