Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover the bowl and refrigerate for at least 2 hours, preferably overnight.

Prepare the Flour Mixture
In a separate bowl, whisk together the all-purpose flour, cornstarch, and baking powder. Set aside.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, shaking off the excess. Carefully place the chicken in the hot oil and fry until golden brown and cooked through, about 8-10 minutes per side. Remove and place on paper towels to drain.

Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.

Mix the Waffle Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, eggs, and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined.

Cook the Waffles
Pour the batter onto the preheated waffle iron and cook according to the manufacturer's instructions until the waffles are golden brown and crisp. Repeat until all the batter is used.
Serving

Plate the Dish
Serve the fried chicken on top of the waffles. Drizzle generously with maple syrup and add pats of butter on top for extra richness.
