Omelet Preparation

    Prepare the Vegetables

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the diced bell pepper and onion, sautéing until they are soft (about 5-7 minutes). Remove from heat and set aside.

    Whisk the Eggs

    In a mixing bowl, crack the 3 large eggs and whisk them together. Add salt and black pepper to the eggs and mix well until fully combined.

    Cook the Omelet

    In the same skillet, add a little more butter if necessary and heat over medium-low heat. Pour in the egg mixture and allow it to cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add Fillings

    Once the omelet is mostly set, add the sautéed vegetables and shredded cheese evenly over one half of the omelet.

    Fold and Serve

    Using a spatula, carefully fold the other half of the omelet over the fillings. Cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through. Slide it onto a plate.

    Prepare Grits or Hash Browns

    If using grits, prepare according to package instructions. If using hash browns, cook them in a separate skillet with a little oil or butter over medium-high heat until crispy and golden brown, about 10-15 minutes.

    Toast the Bread

    While the omelet and sides are cooking, toast the slices of bread. Spread 1 tablespoon of butter on the toast once it’s done to your liking.
