Potato Preparation

Method

Potato Preparation

  1. 1

    Wash and Peel Potatoes

Begin by washing the russet potatoes thoroughly under running water. Peel the skins off using a vegetable peeler.

  2. 2

    Cut into Waffle Fries

Using a waffle fry cutter or a knife, cut the potatoes into waffle shapes. Aim for uniform thickness for even cooking.

  3. 3

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and achieve crispiness.

Frying

  1. 4

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the right temperature.

  2. 5

    Fry the Waffle Fries

Remove the potatoes from the water and pat them dry with a towel. Carefully add a batch of the waffle fries to the hot oil. Fry for about 4-5 minutes or until golden brown and crispy.

  3. 6

    Drain and Season

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season the fries with salt, black pepper, paprika, garlic powder, and onion powder.
