Prepare Shrimp

Season the Shrimp
In a bowl, combine the cayenne pepper, garlic powder, salt, and black pepper. Toss the shrimp in this mixture until well coated.

Coat the Shrimp
Dip each seasoned shrimp into the buttermilk, then dredge it in a mixture of flour and cornmeal, ensuring each shrimp is fully coated.

Fry the Shrimp
In a deep skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Make Tartar Sauce

Combine Ingredients
In a small bowl, mix together mayonnaise, chopped dill pickles, lemon juice, capers, and fresh parsley until well combined. Refrigerate until ready to use.
Assemble the Poboys

Prepare the Buns
Slice the poboy buns in half and lightly toast them if desired.

Layer the Ingredients
Spread a generous amount of tartar sauce on the bottom half of each bun, add a layer of shredded lettuce, followed by sliced tomatoes, and finally top with the fried shrimp.

Top with additional tartar sauce if desired, close the sandwiches, and serve with a side of regular fries.
