Prepare the Salmon

Season the Salmon
Sprinkle both sides of the Atlantic salmon fillets with salt and black pepper.

Sear the Salmon
In a large skillet, heat olive oil over medium heat. Once hot, add the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove from skillet and keep warm.

Add Spinach
Stir in the fresh spinach and season with salt and black pepper. Cook until the spinach is wilted (about 2-3 minutes). Remove from heat.
Prepare Garlic Bread

Make Garlic Butter
In a small bowl, mix softened butter with minced garlic and chopped parsley until well combined.

Bake the Bread
Preheat the oven to 375°F (190°C). Place the baguette halves on a baking sheet and bake for about 10-12 minutes until golden and crispy.
Serve

Plate the Dish
On each plate, serve a salmon fillet alongside a generous portion of sautéed spinach and mushrooms. Add a piece of garlic bread on the side.
