    Wash and Peel Potatoes

    Thoroughly wash the Russet potatoes under cold water. Peel the skin off using a vegetable peeler and place the peeled potatoes on a cutting board.

    Slice Potatoes

    Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices (about 1/8 inch thick) to ensure they become crispy during frying.

Frying

    Heat Oil

    In a large, deep skillet or frying pan, pour the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a slice of potato in; if it sizzles, the oil is ready.

    Fry Potato Slices

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes or until they turn golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and paprika to taste.

    Continue frying the remaining potato slices in batches, ensuring the oil temperature remains consistent. Drain and season each batch as you go.
