Method

Preparation of Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of long-grain white rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.

    Prepare the Beans

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables start to soften.

    Add Garlic and Seasonings

    Stir in the minced garlic, Cajun seasoning, salt, and black pepper. Cook for an additional 2 minutes, stirring frequently.

    Add Beans and Broth

    Add the canned red kidney beans (drained and rinsed) and 1 cup of chicken or vegetable broth to the pot. Toss in the bay leaves. Stir well to combine all ingredients.

    Simmer the Mixture

    Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let it cook for about 20-25 minutes, stirring occasionally. If the mixture becomes too thick, you can add a little more broth or water.

    Once the beans are heated through and the flavors have melded together, remove the bay leaves. Serve the red beans over the cooked rice. Garnish with sliced green onions and chopped parsley if desired.
