Prepare Coleslaw

In a large bowl, combine the shredded green cabbage and carrots.

In a separate bowl, whisk together the vegan mayo, apple cider vinegar, sugar, salt, and black pepper until well combined.

Pour the dressing over the cabbage and carrots. Toss until the vegetables are evenly coated. Set aside in the refrigerator to chill for at least 30 minutes.
Prepare Russian Dressing

In a small bowl, mix together the ketchup, vegan mayo, Dijon mustard, sweet pickle relish, and Worcestershire sauce until smooth.
Assemble Sandwich

On a slice of bread or a sandwich roll, layer 2 slices of plant-based turkey, followed by a slice of provolone cheese.
