Fried Shrimp Preparation

Prepare the Shrimp
In a bowl, combine cornstarch, cayenne pepper, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

Coat the Shrimp
Dip each shrimp first in the cornstarch mixture, then in the beaten eggs, and finally coat with panko breadcrumbs.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Add Sweet-Spicy Sauce
In a small bowl, mix honey and hot sauce. Drizzle over the fried shrimp and toss gently to coat.
Salad Assembly

Prepare the Salad Base
In a large salad bowl, combine the spring mix, diced red and green bell peppers, sliced jalapenos, and shredded Monterey Jack cheese.

Add Fried Shrimp
Top the salad with the sweet-spicy fried shrimp.

Add Candied Pecans and Tortilla Strips
Sprinkle candied pecans and tortilla strips over the salad.
Vinaigrette Preparation

Make the Vinaigrette
In a jar, combine cranberry juice, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper. Shake well until emulsified.
Serving

Dress the Salad
Drizzle the cranberry vinaigrette over the salad just before serving. Toss gently to combine.
