Method

Preparation

  1. 1

    Prepare the Fish

Rinse the catfish fillets under cold water and pat them dry with paper towels. Cut the fillets into strips about 1 inch wide.

  2. 2

    Marinate the Fish

In a bowl, pour the buttermilk over the catfish strips. Make sure they are fully submerged. Let them marinate in the refrigerator for at least 30 minutes.

Breading and Frying

  1. 3

    Prepare the Breading

In a shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well.

  2. 4

    Heat the Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading into it; if it sizzles, it's ready.

  3. 5

    Bread the Fish

Remove the catfish strips from the buttermilk and let the excess drip off. Dredge each strip in the cornmeal mixture, making sure it is well-coated.

  4. 6

    Fry the Fish

Carefully place the breaded catfish strips in the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain.

Serving

  1. 7

    Cook the Fries

While the fish is frying, prepare the frozen French fries according to package instructions. Alternatively, you can serve with Sun Chips as a side.

  2. 8

    Serve

Serve the fried catfish strips hot with the freshly cooked fries or a bag of Sun Chips on the side. Enjoy!
