Prepare the Fish
Rinse the catfish fillets under cold water and pat them dry with paper towels. Cut the fillets into strips about 1 inch wide.

Marinate the Fish
In a bowl, pour the buttermilk over the catfish strips. Make sure they are fully submerged. Let them marinate in the refrigerator for at least 30 minutes.
Breading and Frying

Prepare the Breading
In a shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading into it; if it sizzles, it's ready.

Bread the Fish
Remove the catfish strips from the buttermilk and let the excess drip off. Dredge each strip in the cornmeal mixture, making sure it is well-coated.

Cook the Fries
While the fish is frying, prepare the frozen French fries according to package instructions. Alternatively, you can serve with Sun Chips as a side.
