Method

Fried Catfish

    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

    Batter the Fish

    In a bowl, mix cornmeal, flour, cajun seasoning, salt, and pepper. Remove catfish from buttermilk and dredge each fillet in the cornmeal mixture until fully coated.

    Fry the Catfish

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the catfish fillets in batches for about 5-7 minutes or until golden brown and cooked through. Drain on paper towels.

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Soak in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Season with salt after draining.

Coleslaw

    Mix the Ingredients

    In a large bowl, combine shredded cabbage and grated carrot.

    Prepare the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss to coat well.

    Chill the Coleslaw

    Refrigerate the coleslaw for at least 30 minutes before serving to let the flavors meld together.

Garlic Bread

    Prepare the Garlic Butter

    In a bowl, mix softened butter, minced garlic, and chopped parsley until well combined.

    Spread and Bake

    Slice the French bread in half lengthwise and spread the garlic butter evenly on both halves. Bake in a preheated oven at 375°F (190°C) for about 10-12 minutes or until golden.

Tartar Sauce

    Mix the Sauce

    In a bowl, combine mayonnaise, relish, lemon juice, and chopped capers. Stir until well blended.

    Chill the Sauce

    Refrigerate tartar sauce for at least 15 minutes before serving to enhance flavors.
