Method

For Blackened Red Fish Tacos

  1. 1

    Prepare the Fish

Rub the red fish fillets generously with blackening seasoning on both sides.

  2. 2

    Cook the Fish

Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned fish fillets and cook for about 4-5 minutes per side until blackened and cooked through.

  3. 3

    Warm the Tortillas

In a separate skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

  4. 4

    Assemble the Tacos

Place cooked fish on the warm tortillas, top with shredded cabbage, and serve with lime wedges on the side.

For Avocado Ranch Dressing

  1. 5

    Blend the Dressing

In a blender, combine the ripe avocado, Greek yogurt, ranch seasoning mix, lemon juice, garlic powder, salt, and pepper. Blend until smooth and creamy.

  2. 6

    Serve the Dressing

Serve the avocado ranch dressing on the side or drizzle over the assembled blackened fish tacos.

For Firecracker Shrimp Tacos

  1. 7

    Prepare the Shrimp

Set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.

  2. 8

    Bread the Shrimp

Dredge each shrimp in cornstarch, dip in the egg wash, and coat with panko breadcrumbs.

  3. 9

    Fry the Shrimp

Heat oil in a deep skillet over medium-high heat. Fry the breaded shrimp in batches for about 2-3 minutes until golden brown and cooked through. Drain on paper towels.

  4. 10

    Make the Firecracker Sauce

In a bowl, mix together the sriracha sauce and ketchup until well combined.

  5. 11

    Warm the Tortillas

In a separate skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

  6. 12

    Assemble the Tacos

Place the fried shrimp on the warm tortillas, drizzle with firecracker sauce, and top with shredded lettuce and sliced jalapeños.
