Shrimp Preparation

Marinate the Shrimp
In a bowl, combine the buttermilk, cayenne pepper, paprika, garlic powder, salt, and black pepper. Add the shrimp and let it marinate for at least 30 minutes in the refrigerator.

Prepare the Breading
In a separate bowl, mix together the all-purpose flour and cornstarch. This will be used for coating the shrimp.
Frying the Shrimp

Heat the Oil
In a large frying pan or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Shrimp
Remove shrimp from the marinade, shaking off excess liquid. Dredge each shrimp in the flour and cornstarch mixture, ensuring they are fully coated.

Fry the Shrimp
Carefully lower the coated shrimp into the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
Assembling the Poboy

Prepare the Buns
Slice the poboy buns in half lengthwise without cutting all the way through. Toast lightly if desired.

Build the Poboy
Spread a generous amount of tartar sauce on the inside of each bun. Add a layer of shredded lettuce, followed by sliced tomatoes, and top with the crispy fried shrimp.
Cooking the Fries

Cook the Fries
Prepare the frozen French fries according to package instructions, either by baking or frying.

Once cooked, sprinkle with salt to taste.
