Country Fried Steak

    Prepare the Breading

    In a shallow dish, combine 1 cup of all-purpose flour, 1 tsp salt, 1 tsp black pepper, and 1 tsp paprika.

    Prepare the Egg Mixture

    In another bowl, whisk together 1 large egg and 1 cup of milk until well combined.

    Bread the Steak

    Dip each piece of beef cube steak into the egg mixture, then coat it thoroughly with the flour mixture. Press the flour onto the steak to ensure it adheres well.

    Fry the Steak

    In a large skillet, heat 1 cup of vegetable oil over medium-high heat. Once hot, carefully place the breaded steak pieces into the skillet. Fry for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Gravy

    Make the Roux

    In the same skillet used for frying the steak, remove excess oil, leaving about 2 tablespoons. Over medium heat, add 1 cup of all-purpose flour to the skillet and stir constantly for 2-3 minutes until it turns a light golden brown.

    Add Milk and Seasoning

    Slowly whisk in 2 cups of milk, making sure to break up any lumps. Add 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder. Continue cooking until the gravy thickens, about 5-7 minutes. Adjust seasoning to taste.

    Cook the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack 2 large eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.

Sides

    Prepare Grits or Hash Browns

    If making grits, cook according to package instructions. If using hash browns, prepare them as directed until crispy and golden.

    Toast the Bread

    Toast 2 slices of bread until golden brown.
