Slice the Steak
Thinly slice the ribeye steak against the grain into strips.

Cook the Steak
In a large skillet or griddle, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak, season with salt and black pepper, and cook for about 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil and add the sliced onions, mushrooms, and bell peppers. Sauté over medium heat for about 5-7 minutes, until the vegetables are tender and caramelized.

Prepare the Rolls
While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through.

Spoon the steak and cheese mixture into each hoagie roll. Serve immediately while hot.
