Method

Chicken Preparation

  1. 1

    Grill the Chicken

Preheat the grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper. Grill for 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).

  2. 2

    Prepare the Lemon Butter Sauce

In a small saucepan, melt butter over medium heat. Add lemon juice and stir to combine. Cook for an additional 2-3 minutes until slightly thickened.

  3. 3

Top with Goat Cheese and Sun-Dried Tomatoes

Once the chicken is grilled, remove from the grill and top with crumbled goat cheese and chopped sun-dried tomatoes. Drizzle the lemon butter sauce over the top.

Garlic Mashed Potatoes Preparation

  1. 4

    Boil the Potatoes

Peel and chop the potatoes into even-sized pieces. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork-tender.

  2. 5

    Mash the Potatoes

In a separate saucepan, sauté minced garlic in butter until fragrant. Drain the potatoes, then return them to the pot. Add the garlic butter, milk, salt, and black pepper. Mash until smooth and creamy.

Vegetable Preparation

  1. 6

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add the mixed seasonal vegetables, salt, and black pepper. Sauté for about 5-7 minutes or until tender yet crisp.

Garlic Bread Preparation

  1. 7

    Prepare the Garlic Butter

In a small bowl, combine softened butter, minced garlic, and chopped parsley.

  2. 8

    Toast the Garlic Bread

Spread the garlic butter mixture generously over the sliced baguette. Toast in a preheated oven at 180°C (350°F) for about 10 minutes or until golden.
