Method

For the Chicken Fried Steak

  1. 1

    Prepare the Breading

In a shallow bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk.

  2. 2

    Bread the Steaks

Dip each cube steak into the flour mixture, ensuring it is coated well, then into the egg mixture, and finally back into the flour mixture to create a thick coating.

  3. 3

    Fry the Steaks

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded cube steaks and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

For the Mashed Potatoes

  1. 4

    Boil the Potatoes

Peel and cut the potatoes into quarters. Boil in a large pot of salted water for about 15-20 minutes, or until fork-tender.

  2. 5

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

For the Country Gravy

  1. 6

    Make the Roux

In the same skillet used for the steaks, add sausage drippings or butter and heat over medium heat. Stir in the flour and cook for 1-2 minutes until golden brown.

  2. 7

    Add Milk

Gradually whisk in the milk, stirring constantly until the gravy thickens. Add salt and black pepper to taste.

For the Corn

  1. 8

    Heat the Corn

In a saucepan, combine the canned corn, butter, and salt. Heat over medium until warmed through, stirring occasionally.
