Method

For the Chicken Fried Chicken

  1. 1

    Prep the Chicken

Start by tenderizing the chicken breasts using a meat mallet until they are about 1/2 inch thick.

  2. 2

    Set Up Breading Station

In three shallow dishes, set up your breading station: one with flour mixed with salt, pepper, garlic powder, and onion powder, one with buttermilk, and one with beaten eggs.

  3. 3

    Bread the Chicken

Dip each chicken breast first into the flour mixture, then into the buttermilk, and finally back into the flour, ensuring an even coating.

  4. 4

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces for about 5-7 minutes per side, or until golden brown and cooked through.

  5. 5

    Drain and Keep Warm

Remove the fried chicken from the skillet and place on a paper towel-lined plate to drain excess oil. Keep warm in an oven set to low heat.

For the Mashed Potatoes

  1. 6

    Boil the Potatoes

Peel and cut the russet potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes.

  2. 7

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, then mash until smooth and creamy.

For the Country Gravy

  1. 8

    Make the Roux

In a saucepan, melt butter over medium heat. Stir in the flour and cook for about 2 minutes to form a roux.

  2. 9

    Add Milk

Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

For the Corn

  1. 10

    Cook the Corn

In a saucepan, melt butter over medium heat. Add the frozen corn and cook until heated through. Season with salt to taste.
