Preparation

    Slice the Chicken

    If not already sliced, thinly slice the grilled chicken breast into strips.

    Prepare the Vegetables

    Slice the onion and mushrooms. If using, slice the hot and sweet peppers.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they start to become translucent, about 3-4 minutes. Then, add the sliced mushrooms and peppers. Sauté everything together for another 5-7 minutes until the vegetables are soft and slightly caramelized. Season with salt and black pepper.

    Add the Chicken

    Add the sliced grilled chicken to the skillet with the vegetables. Stir everything together and cook for an additional 2-3 minutes until the chicken is heated through.

    Melt the Cheese

    Place the provolone cheese slices on top of the chicken and vegetable mixture. Cover the skillet with a lid and cook for another 2 minutes, or until the cheese is melted.

Assembly

    Prepare the Hoagie Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise, making sure not to cut all the way through.

    Fill the Rolls

    Once the cheese has melted, use a spatula to scoop the chicken and vegetable mixture into each hoagie roll. Repeat until all rolls are filled.

    Serve

    Serve the chicken cheesesteaks hot with extra hot or sweet peppers on the side, if desired.
