Method
Salad Preparation
- 1
Prepare the Grilled Chicken
Season the chicken breast with salt and pepper. Preheat a grill or grill pan over medium-high heat, and grill the chicken for about 5-7 minutes on each side or until cooked through. Remove from the grill and let it rest for a few minutes before slicing.
- 2
Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water. Dry it using a salad spinner or paper towels. Chop or tear the lettuce into bite-sized pieces and place it in a large salad bowl.
Crouton Preparation
- 3
Make the Croutons
Preheat the oven to 375°F (190°C). Cut the bread into small cubes. In a bowl, toss the bread cubes with olive oil, garlic powder, and salt. Spread the cubes on a baking sheet and bake for about 10-15 minutes or until golden brown and crispy, stirring halfway through.
Dressing Preparation
- 4
Make the Caesar Dressing
In a medium bowl, mix together mayonnaise, Greek yogurt, Parmesan cheese, lemon juice, minced garlic, Worcestershire sauce, and black pepper. Adjust seasoning to taste.
Assembly
- 5
Combine and Serve
In the large bowl with romaine lettuce, add the sliced grilled chicken, croutons, and toss gently with the Caesar dressing until evenly coated. Top with additional Parmesan cheese if desired. Serve immediately.
