Method

Preparation of Chicken

  1. 1

    Marinate Chicken

In a bowl, combine buttermilk, salt, pepper, paprika, and garlic powder. Add chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

  2. 2

    Prepare the Breading

In a separate bowl, mix together flour and cornstarch. Remove marinated chicken from the refrigerator and coat each piece thoroughly in the flour mixture.

Frying Chicken

  1. 3

    Heat Oil

In a large frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Fry Chicken

Carefully place the breaded chicken pieces into the hot oil. Fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Waffle Preparation

  1. 5

    Mix Dry Ingredients

In a bowl, whisk together flour, baking powder, sugar, and salt.

  2. 6

    Combine Wet Ingredients

In another bowl, beat eggs and then mix in milk, melted butter, and vanilla extract.

  3. 7

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.

  4. 8

    Cook Waffles

Preheat your waffle iron. Pour the batter onto the hot waffle iron and cook according to the manufacturer's instructions until golden brown. Repeat with remaining batter.

Gravy Preparation

  1. 9

    Make Roux

In a saucepan, melt butter over medium heat. Stir in flour and cook for about 2 minutes until it becomes a light golden color.

  2. 10

    Add Milk

Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.

  3. 11

    Season Gravy

Add salt and black pepper to taste. Keep warm until ready to serve.

Assembly

  1. 12

    Plate the Dish

Place a waffle on a plate, top it with crispy fried chicken, and generously drizzle with country gravy. Serve with a side of maple syrup.
