Preparation of Calamari

    Clean the Calamari

    Begin by cleaning the fresh calamari. Remove the head, innards, and skin. Rinse the calamari under cold water and slice the body into rings.

    Prepare the Breading

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create an even coating.

    Beat the Eggs

    In another bowl, beat the eggs until well combined. This will be used to help the breading stick to the calamari.

Cooking the Calamari

    Heat the Oil

    In a large deep skillet or pot, heat the cooking oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the breading mix into the oil; it should sizzle immediately.

    Coat the Calamari

    Dip each calamari ring into the beaten eggs, allowing any excess to drip off, then coat thoroughly in the breading mixture.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil, being cautious not to overcrowd the pan. Fry in batches for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Once cooked, remove the calamari from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve hot with Sweet Thai chili sauce on the side.
