Prepare Seafood

Prepare Shrimp
In a medium bowl, whisk together eggs and milk. Dip shrimp into the egg mixture, then dredge in a mixture of flour, cornmeal, and 1 tablespoon of Cajun seasoning. Set aside.

Prepare Catfish
Repeat the same process for catfish fillets, ensuring they are well coated with the breading mixture. Set aside.
Fry Seafood

Heat Oil
In a large deep skillet or fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry Shrimp
Carefully add shrimp to the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and cooked through. Remove and drain on paper towels.

Fry Catfish
In the same oil, fry catfish fillets for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Cook Fries
While the seafood is frying, prepare frozen French fries according to package instructions (baking or frying).
Make Red Beans & Rice

Add Beans and Seasoning
Add canned red beans (drained) and 1 tablespoon of Cajun seasoning. Stir to combine and cook until heated through.

Serve with Rice
Serve the red beans over cooked white rice.
Prepare Garlic Bread

Mix Garlic Butter
In a small bowl, combine softened butter, garlic powder, and chopped parsley. Mix until smooth.

Spread and Bake
Slice the French bread in half lengthwise and spread the garlic butter mixture on both halves. Place on a baking sheet and bake in a preheated oven at 375°F (190°C) for about 10-12 minutes or until golden.

Plate the Cajun Platter
On a large serving platter, arrange fried shrimp, fried catfish strips, French fries, and red beans & rice. Serve with garlic bread and small bowls of tartar and cocktail sauce.
