Preheat Oven
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

Prepare Bread
Cut the day-old bread into cubes and place them in a large mixing bowl.

Combine Wet Ingredients
In a separate bowl, whisk together the whole milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, and salt until fully combined.

Mix Bread and Wet Ingredients
Pour the wet mixture over the bread cubes and gently fold them together until the bread is evenly coated. Let it sit for 15 minutes to allow the bread to soak up the mixture.

Add Pecans
Fold in the chopped pecans into the bread mixture.

Bake
Transfer the mixture to the greased baking dish and bake in the preheated oven for 40-50 minutes or until the pudding is set and the top is golden brown.

While the bread pudding is baking, make the brandy butter by creaming the unsalted butter and powdered sugar together in a bowl until light and fluffy.

Stir in the brandy until well incorporated. Set aside and keep at room temperature until ready to serve.
