Prepare the Chicken

Season the Chicken
Rub the blackening seasoning evenly over both sides of each chicken breast.

Cook the Chicken
Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.
Prepare the Toppings

Cook the Bacon
In the same skillet, cook the bacon over medium heat until crispy. Remove and place on paper towels to drain.

Caramelize the Onion
In the remaining bacon grease, add sliced onions and cook over low heat, stirring occasionally, until they are soft and caramelized (about 15 minutes). Set aside.

Prepare the Vegetables
Wash and slice the tomato. Tear off a leaf of lettuce.
Assemble the Sandwich

Melt the Cheese
Place the cooked chicken breasts back in the skillet and top each with a slice of pepper jack cheese. Cover and cook for 1-2 minutes until the cheese is melted.

Build the Sandwich
On the bottom half of each sandwich bun, spread mayonnaise, then place the melted cheese chicken, crispy bacon, caramelized onions, lettuce, and tomato. Top with the other half of the bun.
