Dough Preparation

Activate the Yeast
In a small bowl, combine warm milk (about 110°F) and granulated sugar. Sprinkle the active dry yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture, eggs, and melted butter. Mix until a soft dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Form the dough into a ball.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.
Frying the Beignets

Prepare the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the beignets.

Shape the Beignets
Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out to about 1/4-inch thick. Cut into squares or rectangles, about 2-3 inches wide.

Carefully drop the dough pieces into the hot oil, a few at a time. Fry until they are golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.
