Slow Roast the Beef
Preheat your oven to 275°F (135°C). Place the seasoned beef on a roasting rack in a pan. Roast in the preheated oven for approximately 2 to 3 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy.

Rest the Beef
Once done, remove the beef from the oven and tent it with aluminum foil. Allow it to rest for at least 20 minutes. This helps the juices redistribute.

Slice the Beef
After resting, slice the roast beef thinly against the grain. This ensures tender slices.

Assemble the Sandwiches
Cut the ciabatta rolls in half. Spread mayonnaise on both sides. Layer the sliced roast beef, followed by provolone cheese, lettuce, tomato, and onion. Top with the other half of the roll.
