Form patties
Place the 1 lb ground beef in a bowl. Sprinkle the kosher salt (1 tsp) and black pepper (1/2 tsp) over the meat and add the Worcestershire sauce (1 tsp) if using. Gently mix with your hands until seasonings are evenly distributed; do not overwork. Divide into 4 equal portions (about 4 oz each). Shape each portion into a patty about 3/4 inch thick and slightly wider than the bun. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

Cook patties
Heat a large skillet or griddle over medium-high heat. Add 1 tbs neutral oil and swirl to coat. When oil is shimmering, place patties on the hot surface, leaving space between them. Cook without moving for 3-4 minutes until a brown crust forms. Flip patties and cook 2-3 more minutes for medium (internal temp about 160°F/71°C). During the last 30-60 seconds of cooking, top each patty with a slice of cheddar cheese and cover the pan with a lid or tent with foil to melt the cheese. Remove patties and let rest on a plate for 2 minutes.

Prepare sauces
Mix mayonnaise (4 tsp), yellow mustard (2 tsp), and ketchup (2 tsp) together in a small bowl until combined. Taste and adjust proportions if desired. This will be the burger spread.

Assemble burgers
Spread about 1 tbs of the sauce mixture on the bottom half of each toasted bun. Place an iceberg lettuce leaf on the sauce, then the cheeseburger patty (cheese side up). Top each patty with 2 pickle slices, a few slices of tomato, and a few rings of red onion. Spread a little sauce on the top bun and set on the assembled burger. Serve immediately.
