    Preheat

    Position oven rack about 6 inches (15 cm) below the broiler element. Preheat the broiler on high for 5 minutes so it reaches full heat.

    Prepare fillets

    Pat the salmon fillets dry with paper towels (skin side down if present). This helps the surface brown under the broiler.

    Season

    Brush both sides of each fillet with olive oil (use about 1/2 tbs per fillet). Sprinkle kosher salt and freshly ground black pepper evenly over the flesh side. Zest the lemon directly over the fillets, then squeeze 1 tablespoon of lemon juice across all fillets.

    Arrange for broiling

    Line a rimmed baking sheet with foil for easier cleanup and place a wire rack on the sheet if you have one (this promotes air circulation and even cooking). Place the fillets skin-side down on the rack or directly on the foil if not using a rack, leaving space between pieces for heat circulation.

    Broil

    Place the baking sheet under the preheated broiler, about 6 inches from the heat source. Broil on high for 6–9 minutes, depending on thickness: about 6 minutes for 3/4-inch thick fillets, 8–9 minutes for 1-inch thick. Do not flip. The salmon is done when the top is lightly browned and the flesh flakes easily with a fork, with the center still moist (internal temperature 125–130°F / 52–54°C for medium-rare to medium).

    Finish with butter

    If using, add 1 tablespoon unsalted butter to a small saucepan and melt over low heat, or dot the melted butter over the hot fillets immediately after they come out of the oven so it melts over the top.

    Garnish and serve

    Sprinkle chopped fresh dill or parsley and a pinch (about 1/4 tsp) of red pepper flakes over the fillets. Taste and add a tiny pinch of salt or an extra squeeze of lemon if desired. Serve immediately.
