Mix and Form Patties
Put ground beef in a large bowl. Add salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a fork until ingredients are just combined — avoid overworking the meat to keep patties tender. Divide meat into 4 equal portions (about 4 oz each for 1 lb yields smaller patties; adjust to 2 patties if you prefer larger). Form each portion into a 3/4-inch thick patty, making a shallow dimple in the center of each with your thumb to reduce puffing while cooking.

Preheat a large skillet over medium heat. Lay bacon slices in a single layer and cook until crisp, flipping as needed, about 8–12 minutes depending on thickness. Transfer cooked bacon to a paper towel–lined plate to drain. Once cooled slightly, if desired, cut each slice in half so pieces fit on the burger.

Make Bleu Cheese Spread
In a small bowl, combine crumbled bleu cheese, softened cream cheese, mayonnaise, and chopped chives. Mix until mostly smooth with some small crumbles remaining for texture. Season with freshly ground black pepper to taste. Refrigerate until ready to use so it firms slightly.

Heat a large skillet or grill over medium-high heat and brush with 1 tablespoon neutral oil. When the surface is hot, add patties (do not overcrowd — cook in batches if needed). Cook patties about 3–4 minutes per side for medium (internal temperature about 145–150°F / 63–66°C). In the last 1–2 minutes of cooking, reduce heat to medium, place desired amount of bleu cheese spread on top of each patty (about 3/4–1 oz per patty) and cover loosely with a lid so the cheese warms and softens but does not fully melt away. Remove patties to a plate and let rest 3–5 minutes.

Assemble Burgers
Place a lettuce leaf on the bottom bun, add a tomato slice and a rested bleu-cheese-topped patty. Top the patty with 2 slices of cooked bacon (or enough to cover), some thinly sliced red onion, and pickles if using. Add a spoonful more of the bleu cheese spread to the top bun if you like extra tang. Cap with top bun and serve immediately.

Serve burgers hot with your choice of side (fries, chips, or a simple salad). If you prefer a stronger bleu-cheese flavor, increase crumbled bleu cheese in the spread to 4 oz. For safety, cook beef to at least 160°F (71°C) if preferred well done.
