    Chill glass

    Place a coupe or Nick & Nora glass in the freezer for a few minutes or fill it with ice water to chill while you prepare the cocktail.

    Combine ingredients

    Add the Sevilla liqueur, Carpano Antica sweet vermouth, and two dashes of Angostura bitters into a mixing glass or large mixing vessel.

    Add ice and stir

    Fill the mixing glass with large ice cubes. Stir gently but thoroughly with a bar spoon for 30–45 seconds (about 20–30 full turns) until the mixture is well chilled, slightly diluted, and clear.

    Prepare glass

    If you used ice water to chill the serving glass, dump it now. Fine-strain or double-strain the stirred cocktail from the mixing glass into the chilled coupe or Nick & Nora glass.

    Garnish

    Express the oils of an orange or Seville orange peel over the drink by holding the peel skin-side down about 4–5 inches above the glass and giving it a sharp bend so the oils spray onto the surface. Rub the peel around the rim and drop it into the cocktail (or rest it on the rim).

    Serve

    Serve immediately while cold. Sip slowly to appreciate the Seville orange notes balanced with the rich vermouth and bitters.
