Mix and shape
Place the ground beef in a large bowl. Add kosher salt, black pepper, Worcestershire sauce, and the grated onion. Gently combine with your hands or a spoon until just mixed—do not overwork. Divide into two equal portions and shape each into a patty about 3/4-inch thick and slightly wider than the bun. Make a shallow dimple in the center of each patty with your thumb to reduce bulging while cooking.

Chill briefly
Place patties on a plate and refrigerate for 10–15 minutes while you prepare the mushrooms and preheat your cooking surface. This helps them hold their shape.

Cook mushrooms
Heat a large skillet over medium-high heat. Add butter and olive oil. When the butter is melted and foaming, add the sliced mushrooms in a single layer (work in batches if necessary). Let them brown without stirring for 2 minutes, then stir and continue to cook for 3–4 minutes until nicely browned.

Finish mushrooms
Add the minced garlic and thyme and cook 30–45 seconds until fragrant. Season with salt and black pepper. If the pan is sticky, pour in the dry sherry or a tablespoon of beef broth and scrape up any browned bits; cook until liquid evaporates. Remove from heat and keep warm.

Cook patties
Place the patties on the hot surface. Cook for about 3–4 minutes on the first side without moving to get a good sear. Flip and cook another 3 minutes for medium (adjust time ±1–2 minutes for desired doneness).

Add Swiss cheese
About 1 minute before the patties are done, place two slices of Swiss cheese on each patty. Cover the pan with a lid for 30–60 seconds to help the cheese melt fully.

Assemble burgers
Spread mayonnaise and/or Dijon mustard on the bottom bun if using. Place lettuce leaf, tomato slices, then the Swiss-topped patty. Pile a generous spoonful of the sautéed mushrooms over the cheese. Top with the other bun half and serve immediately.
