    Prepare bacon

    If your bacon is not already cooked, preheat oven to 400°F (200°C). Arrange applewood smoked bacon slices on a foil-lined baking sheet and bake 12–18 minutes until crisp to your liking. Remove and drain on paper towels. If the bacon is pre-cooked, reheat briefly in a skillet or microwave until warm and slightly crisp (about 30–60 seconds).

    Toast croissants

    Slice the housemade croissants in half horizontally. Lightly butter the cut sides with the unsalted butter (optional). Toast the croissant halves in a skillet over medium heat or in a 350°F (175°C) oven for 2–4 minutes until lightly golden and warmed through. This prevents sogginess from mayonnaise and tomato.

    Season tomato

    Pat the tomato slices dry with a paper towel to remove excess moisture. Sprinkle the tomato slices with the kosher salt and freshly ground black pepper, distributing evenly on both slices.

    Assemble sandwich

    Spread about 1 tablespoon of mayonnaise evenly on the bottom croissant half and 1/2 tablespoon on the top half. On the bottom half layer the ingredients in this order for structure and best bite: 1) turkey slices (3 oz) folded if necessary to fit, 2) ham slices (2 oz), 3) white cheddar slice (1 oz), 4) cooked applewood smoked bacon (2 slices). Place the seasoned tomato slices on the top croissant half and the lettuce leaves over the tomato (or place lettuce directly on the bottom for extra barrier—either is acceptable). Close the sandwich by pressing the top croissant half down gently so layers settle evenly.

    Portion and serve

    If making a half-club portion (smaller than a full club), retain the full croissant but serve as-is; to create two half portions from one sandwich, cut the assembled sandwich in half on a slight diagonal using a sharp serrated knife. Secure each half with a toothpick if desired. Serve immediately while croissant is warm and bacon crisp. Offer additional mayonnaise or pickles on the side if preferred.
