Muddle mint and sweetener
In a cocktail shaker, add 8 fresh mint leaves and 0.75 oz simple syrup. Gently muddle just enough to release the mint's aromatic oils — about 4–6 light presses. Avoid over-muddling (which can make the drink bitter).

Add spirits and citrus
Add 2 oz Grimm Farm Gin (or your chosen gin) and 0.75 oz fresh lemon juice to the shaker with the muddled mint and syrup.

Shake
Add a handful of ice (about 1 cup cubed) to the shaker, cap it, and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain and top
Double-strain the cocktail into a rocks glass filled with fresh ice (or a chilled coupe if you prefer). Top with 2 oz chilled sparkling wine or soda water to provide the 'bubbles.'

Garnish and serve
Garnish with one maraschino or brandied cherry, a thin slice of orange set on the rim or floated, and a fresh mint sprig. Clap the mint between your palms briefly to wake the aroma before placing it on the drink. Serve immediately.
