Sweat aromatics
Heat a large soup pot over medium heat. Add the olive oil and butter. When the butter foams, add the diced onion, leeks, carrots and celery. Season lightly with 1/4 tsp salt. Cook, stirring occasionally, until vegetables are softened and translucent, about 6–8 minutes. Add the minced garlic and cook 30–60 seconds until fragrant.

Deglaze
Pour in the white wine (if using) to deglaze the pot, scraping any browned bits from the bottom with a wooden spoon. Let the wine reduce by half, about 1–2 minutes.

Add liquids and simmer
Add the vegetable broth, water, bay leaf, thyme, diced potato and remaining 3/4 tsp salt. Bring the soup to a gentle boil, then reduce heat to low and simmer uncovered until potatoes and carrots are tender, about 18–20 minutes.

Adjust seasoning
Remove and discard the bay leaf. Stir in the chopped parsley, red pepper flakes, black pepper and lemon juice. Taste and add up to 1/2 tsp more salt if needed.

For a smoother, creamier texture: use an immersion blender to partially or fully purée the soup to your desired consistency. Alternatively, transfer 2 cups of soup to a blender, purée until smooth, and return to the pot.
