Build and stir
Chill an old-fashioned glass by filling it with ice and setting aside while you prepare the drink.

In a mixing glass or cocktail shaker (without shaking), add 2 oz J. Carver Barrel Gin, 0.75 oz Aperol, and 0.75 oz Vermut Lustau.

Fill the mixing glass with enough ice to reach the level of the liquid (large ice is preferred). Stir the mixture briskly for 30–45 seconds until well chilled and properly diluted (the mixing glass should become cold and slightly frosted). Aim for about 20–25% dilution by weight — enough to integrate flavors and soften alcohol burn.

Discard the ice from the chilled old-fashioned glass and place 1–2 large ice cubes (or a single large block) in the glass.

Strain the stirred cocktail into the prepared old-fashioned glass over the large ice.

Serve immediately. Optionally provide a small stirring spoon so the drinker can re-stir as the ice melts.
