Beef Patties
Form patties
Place the ground beef in a bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce (if using) over the meat. Gently mix with your hands just until combined — do not overwork. Divide the meat into four equal portions (about 4 oz / 115 g each) and form into patties about 3/4 inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.
Cook patties
Heat a large cast-iron skillet or grill over medium-high heat. Add the vegetable oil to the skillet (or lightly oil grill grates). When the oil is shimmering, add the patties leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip once and cook 3 minutes more for medium-rare to medium. Place a slice of cheese on each patty during the last 1 minute of cooking and cover the pan or close the grill lid to melt the cheese. Adjust cook time +1–2 minutes per side for a more-well-done burger.

Prepare toppings
While patties cook, slice the tomato into 1/4-inch rounds. Peel and slice the red onion into thin rings. Wash and dry lettuce leaves. Have pickle slices ready.
Toast buns
Spread about 1/2 tablespoon of softened butter on the cut side of each bun. When patties are almost done, place buns cut-side down on the skillet or grill and toast for 1–2 minutes until golden and slightly crisp. Remove and keep warm.
Assembly & Condiments
Spread 1 teaspoon mayonnaise on the top bun and 1 teaspoon ketchup on the bottom bun (adjust to taste). Add a small smear of mustard to the bottom bun if desired.
Place a lettuce leaf on the bottom bun, then a slice of tomato, the cheesy beef patty, two pickle slices, and a few onion rings. Cap with the top bun.
Serve immediately with chips, fries, or a simple salad.
