Beef patties

Form patties

Divide the 1 lb ground beef into four equal portions (about 4 oz / 113 g each). Gently form into thin patties slightly larger than the buns (about 4.5 inches / 11.5 cm diameter). Do not overwork the meat; press a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Season

Season both sides of each patty with kosher salt (about 1/4 tsp per patty if dividing evenly) and a light sprinkle of freshly ground black pepper. Brush or rub each patty with a little vegetable oil and a few drops of Worcestershire sauce per patty for flavor.

Cook patties

Heat a cast-iron skillet or griddle over medium-high heat until very hot (about 3–5 minutes). Place patties in the dry hot skillet (or add 1 tsp oil if sticking) and cook for 2–3 minutes without moving to form a good sear. Flip and cook another 2 minutes for medium. For cheeseburgers, place a slice of cheddar onto two patties after flipping and allow to melt (cover pan for 30–45 seconds to help melt). Internal temperature should reach 160°F (71°C) for well-done ground beef according to food-safety guidance; adjust times to reach desired doneness.

Rest patties

Transfer cooked patties to a plate and let rest for 2 minutes while toasting buns and finishing fries. This helps redistribute juices.

Toast buns: While patties cook, spread 1 tsp softened butter on the cut side of each bun top and bottom. Place buttered cut sides down on the hot skillet or on a separate pan over medium heat and toast until golden, about 30–60 seconds. Watch closely to avoid burning.

Assemble burgers: On each bottom bun, spread 2 tsp hamburger sauce (or ketchup + mayo). Place one lettuce leaf, two tomato slices, and two pickle slices. Add the first cooked patty, then the second patty (the patty with cheese goes on top if using). Add sliced onion rings and a little yellow mustard if desired. Top with the bun crown and secure with a toothpick if needed.

Prepare potatoes

Wash and scrub potatoes. Cut each potato into 1/4 to 1/3-inch thick sticks for classic fries. For crisper fries, soak cut potatoes in cold water for 20–30 minutes to remove excess starch, then drain and pat completely dry with paper towels.

Preheat oven to 425°F (220°C). Toss dried potato sticks with 1–2 tbsp oil, 1 tsp kosher salt, 1 tsp black pepper, and 1 tsp paprika in a bowl until evenly coated. Spread in a single layer on a baking sheet lined with parchment, leaving space between sticks. Bake 20–25 minutes, flipping once at 12–15 minutes, until golden and crisp. Adjust time for thickness.

Cook fries - frying method (optional)

Heat 2 cups vegetable oil in a heavy pot to 350°F (175°C). Fry potatoes in batches for 3–4 minutes until golden and crisp. Drain on paper towels and immediately season with salt and pepper.

Optional - extras

Prepare extras: Arrange extra mustard and onion rings on the plate so diners can add more to taste. If serving sauce on the side, provide remaining hamburger sauce in a small ramekin.
