Burgers
Form patties
Divide the ground beef into four equal portions (about 4 oz / 113 g each). Gently form each portion into a round patty about 3.5 inches (9 cm) in diameter and roughly 3/8–1/2 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking. Do not overwork the meat.
Season
Season both sides of each patty evenly with salt, black pepper, garlic powder, and onion powder.
Cook patties
Heat a large skillet or cast-iron pan over medium-high heat until very hot (about 3–4 minutes). Add 1 tablespoon vegetable oil and swirl to coat. Add two patties to the pan without crowding. Cook 3 minutes on the first side without moving them, then flip and cook 2–3 minutes on the second side for medium doneness. Place one slice of American cheese on each patty during the last 30–45 seconds of cooking and cover the pan briefly to melt the cheese. Transfer cooked patties to a plate and tent with foil to keep warm. Repeat with the remaining two patties, adding a little more oil if pan is dry.
Stacking
For each burger, stack two patties (cheese side up) on top of one another so cheese contacts the bun or the other patty, creating the double hamburger.
Buns & Assembly
Sauce: On the bottom bun spread mayonnaise, then add ketchup and a small drizzle of mustard (or mix together beforehand for an easy burger sauce).
Assemble: Place a leaf of lettuce on the sauced bottom bun, then a couple tomato slices, 2 onion rings, and two pickle slices. Place the stacked double patties on the toppings. Top with the bun crown. Repeat for the second burger.
Serve: Serve immediately while hot with fries or your preferred side.
