Form Patties

Divide the ground beef into four equal portions (for two double patties, two portions per burger). Lightly form each portion into thin patties about 3.5 inches (9 cm) across and roughly 1/2 inch (12 mm) thick, with a shallow thumb indentation in the center of each patty to prevent doming while cooking. Do not overwork the meat; handle gently.

Season

Season both sides of each patty evenly with kosher salt and freshly ground black pepper just before cooking.

Cook Patties

Heat a heavy skillet or griddle over medium-high heat until very hot (about 3–4 minutes). Add the vegetable oil and swirl to coat. Working in a single layer without crowding, place patties in the skillet. Cook for 2–3 minutes on the first side until deeply browned at the edges. Flip once and cook another 1.5–2 minutes for medium (adjust time for desired doneness). If making two burgers (four patties), cook in two batches or use a large griddle. For each patty to be in the same burger, stack two patties when assembling.

Melt Cheese

About 30 seconds before the patties are done on the second side, place one slice of American cheese on each patty and allow it to melt. If using both American and cheddar, place American directly on the patty, then top with cheddar so both melt together. Remove patties to a plate and tent loosely with foil to keep warm.

Prepare Veggies

Thinly slice the yellow onion into rings or finely chop if preferred. Wash and pat dry lettuce leaves. Slice tomato into 1/4-inch rounds. Have dill pickle slices ready.

Buns & Sauce

Make Sauce

In a small bowl combine mayonnaise, ketchup, and yellow mustard. Stir until smooth. Taste and adjust seasoning; add a pinch of salt or more ketchup/mayo to balance if desired.

Toast Buns

Butter the cut sides of the buns with the softened unsalted butter. Toast buttered sides on the same skillet or on a separate pan over medium heat for 1–2 minutes until golden and fragrant.

Assemble Burgers

Spread about 1 tablespoon of the sauce onto the bottom half of each toasted bun. Place one cheese-topped patty on the sauce, then stack a second cheese-topped patty on top (two patties per burger). Add onion rings, tomato slice, pickle slices, and lettuce. Spread a little sauce on the top bun and place it on the burger. Serve immediately.
