Method
Rice
Rinse the rice in a fine-mesh sieve under cold running water until the water runs mostly clear to remove excess starch.
Combine the rinsed rice, 1.25 cups water, 1/4 tsp salt, and 1/2 tbsp oil or butter in a small saucepan. Stir once to combine.
Bring to a gentle boil over medium-high heat, then reduce heat to low, cover tightly, and simmer for 15 minutes without lifting the lid.
Remove from heat and let rice rest, covered, for 10 minutes. Fluff with a fork before plating.
Spam
While the rice is cooking, remove Spam from the can and slice into 8 even slices (about 1/4–1/2 inch thick).
Heat 1 tbsp vegetable oil in a nonstick or cast-iron skillet over medium-high heat until shimmering.
Add Spam slices in a single layer (work in two batches if needed). Fry without moving for 2–3 minutes until the bottoms are deeply browned and crisp.
Flip each slice and cook another 2–3 minutes until browned and crisp on both sides. Sprinkle 1/4 tsp black pepper over the slices while cooking.
Transfer cooked Spam to a paper-towel-lined plate to drain excess oil and keep warm.
Eggs
In a small bowl, crack 2 large eggs and season with 1/8 tsp salt and 1/8 tsp black pepper. Beat lightly with a fork until yolks and whites are just combined.
Season lightly with a pinch of salt and pepper while cooking. Remove eggs carefully with a spatula and keep warm on a plate.
Garnish & Assembly
Divide the fluffed rice onto a serving plate as the base (approximately 1 cup cooked rice).
Arrange 4 slices of cooked Spam (or all slices if preferred) on one side of the rice.
Place the cooked eggs next to the Spam so yolks face up.
Drizzle 1 tsp soy sauce and 1/4 tsp toasted sesame oil over the rice and Spam if using, or serve soy sauce on the side.
Sprinkle 1 tbsp thinly sliced green onions over the plate for freshness and color. Serve immediately while hot.
