Low Carb BBQ Plate - Prepare Marinades & Meats

Make the marinade

In a medium bowl, whisk together 2 tbs olive oil, apple cider vinegar, 2 tbs low-carb BBQ sauce, tamari, Worcestershire sauce, minced garlic, smoked paprika, 1/2 tsp kosher salt, and 1/2 tsp black pepper. If using, add 1 tsp liquid smoke. Reserve 2 tbs of the low-carb BBQ sauce separately for basting during grilling.

Marinate the meats

Place the two chicken thighs, the sirloin steak, and the short ribs in a large zip-top bag or shallow dish. Pour the marinade over the meats, making sure everything is coated. Seal or cover and refrigerate at least 30 minutes and up to 4 hours. If time is limited, marinate 30 minutes at room temperature but no longer than 2 hours for safety.

Preheat and oil

Preheat a grill or a heavy skillet (cast iron) to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates or add 1 tbs olive oil to the skillet and heat until shimmering.

Cook the chicken thighs

Remove chicken from marinade and shake off excess. Grill or sear for 5–6 minutes per side (depending on thickness) until an internal temperature reaches 165°F (74°C). In the last 2 minutes of cooking, brush each side with the reserved low-carb BBQ sauce to glaze. Transfer to a platter and let rest 4–5 minutes.

Cook the steak

Season the sirloin lightly with a pinch of salt and pepper. Grill or sear the steak 3–5 minutes per side for medium-rare to medium (internal temp 130–140°F / 54–60°C), adjusting time for thickness and desired doneness. In the final minute, brush lightly with reserved BBQ sauce. Let rest 5 minutes, then slice against the grain.

Cook the short ribs

Short ribs can be tougher; if already braised or trimmed for fast grilling, grill 3–5 minutes per side until nicely charred and heated through. If using thicker short ribs that need longer cooking, pre-braise (see optional note) until tender and finish on the grill for 2–3 minutes per side with BBQ sauce to glaze. For quick service, sear on high heat until caramelized and internal temperature is 145–160°F depending on cut; let rest 4 minutes.

Fry the eggs

While meats rest, heat a nonstick skillet over medium-low heat and add 1 tbs butter or olive oil. Crack two large eggs into the pan. For sunny-side-up: cook 2–3 minutes until whites are set and yolks still runny; cover briefly if needed to set whites. For over-easy: cook 2 minutes, flip gently, and cook 10–20 seconds more. Season with 1/4 tsp salt and a pinch of black pepper.

Plate and garnish

Arrange on a plate: two BBQ chicken thighs, one portion of sliced BBQ beef, one short rib, and top or place eggs alongside. Spoon any remaining warmed low-carb BBQ sauce over meats if desired. Sprinkle chopped parsley for garnish. Serve immediately.
