Prepare yogurt

In a medium bowl, combine 3 cups plain Greek yogurt, 1 tsp vanilla extract and 2 tbs honey. Stir until smooth and evenly sweetened. Taste and adjust sweetness if desired.

Seasonal Fruit

Prep fruit

Wash all fruit thoroughly. Hull and quarter the strawberries; leave blueberries whole; dice the peach or nectarine if using. Place fruit in a bowl and add 1 tsp lemon juice; gently toss to brighten flavors and prevent browning.

If fruit is very juicy, drain excess juice before assembling so parfait layers remain distinct. Reserve any small amount of juice to stir into the spiced honey if needed.

Granola & Crunch

Measure 1 cup granola and 1 tbs toasted nuts. If your granola is store-bought and you prefer extra crunch, toast it briefly in a dry skillet over medium heat (1–2 minutes) until fragrant, stirring constantly. Let cool before using.

Spiced Honey Drizzle

Make spiced honey

In a small bowl or measuring cup, whisk together 3 tbs honey, 1 tsp fresh lemon juice, 1 tsp ground cinnamon and 1 tsp ground ginger. Add 1 tsp hot water to loosen the honey and whisk until pourable and well combined. Taste and adjust spice or lemon brightness as desired.

Assemble Parfaits

Choose 4 serving glasses or jars. Spoon about 1/4 cup of the sweetened yogurt into the bottom of each glass to form the first layer.

Spoon a layer of seasonal fruit (about 2–3 tbs of the mixed fruit) over the yogurt in each glass.

Add about 2 tbs of granola and a pinch of the toasted nuts on top of the fruit in each glass.

Repeat with another 1/4 cup yogurt layer, another fruit layer (2–3 tbs), and another 2 tbs granola, finishing with a final dollop (about 1/4 cup) of yogurt if desired so the parfait has three yogurt layers and two crunchy layers. Adjust exact quantities so each of the 4 parfaits is evenly filled.

Drizzle about 3/4 tsp of the spiced honey over each assembled parfait (divide the 3 tbs among the 4 servings).

Garnish each parfait with a sprinkle of extra granola or nuts, a few whole berries if desired, a small pinch of grated lemon zest, and a mint leaf.

Serve & Store

Serve immediately for maximum crunch. If preparing ahead, assemble without the final granola layer and spiced honey drizzle; store covered in the refrigerator for up to 8 hours. Add the final granola, spiced honey and garnishes just before serving to retain texture.
