Earl Grey

Heat water

Bring 1 cup (240 ml) of fresh water to a near-boil (about 200°F / 93°C). For best flavor, do not use a rolling boil.

Steep tea

Place the Earl Grey tea bag (or 1 tsp loose leaf in an infuser) into a cup and pour the hot water over it. Steep for 3 to 4 minutes depending on desired strength. Do not over-steep to avoid bitterness.

Finish

Remove the tea bag or leaves. If desired, stir in 2 tablespoons milk and 1 teaspoon honey or sugar. Alternatively, add a lemon slice instead of milk. Serve immediately.

Green

Heat water

Bring 1 cup (240 ml) of water to about 175–185°F (80–85°C). If you don't have a thermometer, bring to a simmer and let sit 1 minute to cool slightly.

Steep tea

Place the green tea bag (or 1 tsp loose leaf in an infuser) into a cup and pour the slightly cooled water over it. Steep for 2 to 3 minutes. Taste after 2 minutes and steep up to 3 minutes if you prefer a stronger flavor. Over-steeping causes bitterness.

Finish

Remove the bag or infuser. Sweeten with 1 teaspoon honey or agave and/or add a lemon wedge if desired. Serve immediately.

Mint

Heat water

Bring 1 cup (240 ml) of water to a full boil (212°F / 100°C).

Prepare mint

If using fresh mint, lightly bruise the leaves with your fingers to release oils. Place 6 fresh mint leaves (or 1 mint tea bag) into a cup.

Steep tea

Pour the boiling water over the mint and steep for 5 to 7 minutes for a bright, aromatic infusion. Adjust steeping time for desired strength.

Finish

Remove the leaves or tea bag. Stir in 1 teaspoon honey and/or add a lemon slice if desired. Serve hot.
