Prepare

Crack the 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk and 1 teaspoon salt. Whisk vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 30–45 seconds). This adds lightness.

Heat pan

Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and allow it to melt gently. Swirl the pan to coat the surface and watch for the butter to foam but not brown (about 1 minute).

Cook eggs

Pour the whisked eggs into the warm skillet. Let the eggs sit undisturbed for 10–15 seconds until the edges just begin to set. Using a silicone spatula, gently push the set edges toward the center, tilting the pan to let uncooked egg flow underneath. Repeat this motion every 10–15 seconds, creating soft folds. Keep the heat low so the eggs cook slowly and remain tender (total cooking time 3–5 minutes).

Finish and season

When the eggs are mostly set but still slightly glossy and moist, remove the pan from the heat. Stir in 1/2 teaspoon freshly ground black pepper. Taste and adjust salt if needed. The residual heat will finish cooking without drying them out.

Transfer the scrambled eggs to a warm plate or divide among 2 servings of toasted bread/crostini. Sprinkle 2 tablespoons grated cheddar or parmesan over the eggs if using; the cheese will melt from the heat. Garnish with 1 tablespoon chopped fresh chives and a dash (about 1 teaspoon) of hot sauce if desired.
