Method
Crab Cakes
Prep crab and dry
Place lump crab meat in a large bowl and gently pick through to remove any shell pieces. Pat the crab very gently with paper towels to remove excess moisture; avoid shredding the lumps.
Mix binding ingredients
In a separate medium bowl, whisk together 1 cup mayonnaise, 1 large egg, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon Old Bay seasoning, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon lemon zest, 2 tablespoons chopped parsley, and 2 tablespoons chopped green onions until smooth.
Combine crab and crumbs
Add the dried crab meat to the mayo-egg mixture and fold gently to coat. Add 1 to 1 1/2 cups breadcrumbs (reserve remaining breadcrumbs for dredging) and fold just until the mixture holds together; do not overmix. The mixture should be slightly sticky but still have visible crab lumps. If too wet, add up to 1/4 cup more breadcrumbs.
Form cakes
Portion mixture into 8 equal portions (about 2 oz each) and shape gently into compact patties about 2.5–3 inches across and 1 inch thick. Place formed patties on a baking sheet and refrigerate for at least 20 minutes to firm up (this helps them hold when frying).
Dredge
Lightly dredge each chilled patty in the remaining breadcrumbs to coat the exterior; shake off excess. This creates a golden crust when pan-fried.
Pan-fry crab cakes
Heat a large skillet over medium heat. Add 2 tablespoons neutral oil and 2 tablespoons butter. When butter is foaming and oil shimmers, add crab cakes (work in batches if needed) and cook 3–4 minutes per side until deep golden brown and heated through. Adjust heat to prevent burning; the internal temperature should reach 145°F (63°C). Transfer cooked cakes to a wire rack or paper towel-lined plate and keep warm in a low oven (200°F / 95°C) while finishing remaining cakes.
Guacamole Topping
Halve and pit the avocados, scoop flesh into a bowl and mash with a fork leaving some small chunks for texture. Add 2 teaspoons finely chopped red onion, 1 tablespoon chopped cilantro, 2 tablespoons fresh lime juice, 1/2 minced jalapeño (optional), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to combine and taste; adjust lime and salt as needed. Cover tightly with plastic film pressed to the surface to prevent browning if not using immediately.
Creamy Lemon Sauce
Whisk together 1/2 cup Greek yogurt, 1/4 cup mayonnaise, 2 tablespoons fresh lemon juice, 1/2 teaspoon lemon zest, 1/2 teaspoon honey, 1/2 teaspoon hot sauce (optional), 1/4 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Taste and adjust acidity or sweetness. Refrigerate until ready to assemble.
Assembly & Serve
Place a warm crab cake on each serving plate (2 crab cakes per person recommended). Spoon about 1 heaping tablespoon of guacamole onto each cake, spreading slightly but leaving some crab visible.
